On the bottom floor, down the stairs next to reception, we find our Cuisine Restaurant. An immense space with a large glass window, we find our natural winery at the end. This is a passageway that might look like the escape route from a castle dungeon. In fact, it practically was. While building the hotel, the old passageway connecting the Casa de Diezmos with the church vicarage came to light. It had been closed and hidden for decades. With one-of-a-kind conditions for ideal storage of even the most delicate wines, we didn't hesitate to turn it into our winery.
This is the stage where it all happens: product-based cuisine with contrasting complex preparations and tributes to simplicity. Our chef, offers us a seasonal tasting menu that is adjusted on a daily basis, based on the market and the weather. The Tasting Menu may be accompanied by a pairing suggested by our sommelier, which includes a small treasure hunt with clues. Even when we're casual, we take cuisine very seriously.
A simple menu, without any frills, but very appetising. Available from midday (13:30h) until evening (22:30h). A bar where you can taste all the wines in our shop. And if you'd like, you can purchase the one you liked the most. A team supported by our sommelier will certainly be able to guide you in the right direction. A cocktail? A coffee? No problem. In its own right, our Winery is a meeting point for visitors, locals and winemakers.
The north door of the lobby looks out over the Villabuena church square. This is where the parish Casa de Diezmos was located and where we find our Winery today, which borrows the same name. This space has become a meeting point for visitors, locals and winemakers in the village. With great affection and high standards set by our sommelier Xabier Vadillo, you can discover the wines the region has to offer. They range from large winery classics to the best-kept secrets at small local wineries. If you're lucky, you may end up toasting with the creator of one of the wines you taste.
